Puffed farro in a Bhel Puri lookalike

It’s cold outside, and sadly enough also rather cold inside ( irregularity of the heating system). This recipe seems quite inappropriate but it is incredibly tasty. For the real version I miss a few ingredients : no tamarind, no coriander, no indian pappadum and puffed farro instead of rice. I decide to use more of the puffed farro instead of using peanuts and farro. I will use more kemonjuice instead of lemon juice and tamarind.

Grind 2 cm of fresh ginger in a mortar. Add the juice of 1 lemon and 1 tablespoon of olive oil. Add some salt and 1 teaspoon of garam masala.

For 2p, chop a small cucumber ( remove the seeds and skin, if too bitter) and a small red onion. Put in a salad bowl. Cut 200 grams of cherry tomatoes ( different colors if you can find them) in quarters. Slice bunch of radishes. Slice 1 green chili. Put everything in the bowl. Mix with the dressing. Add the seeds and juice of 1/2 pomegranate. Chop some mint leaves and fresh parsley ( instead of coriander). Mix all together.

Roast 100 grams of puffed farro in a dry pan ( be careful, it easily burns). Mix with the vegetables. Finish with extra olive oil.

Perfect lunch or light evening meal!
