I love eating and cooking, but I also love to keep my weight under control.

Genetically I was not really gifted with an amazing body, but I always focus on health ( I’m a MD, as you know). I preferred books and music to sports, until 5 years ago when I started to use the treadmill on a regular basis. Since then I love workouts although I still do it out of healthy issues. I’m still waiting for my sixpack but my body looks firmer and weight control is much easier. My good reasons to run on a treadmill: 1. weather( too hot, too cold, too wet) is no excuse 2. less injuries (because of bad roads, because of being gifted with a high level of clumsiness and because of higher incidence of overload injuries 3. I compensate the boredom with Netflix series.

I eat meat now and again, but we mainly eat vegetarian meals or fish. In the September magazine of delicious.nl Ramael Scully, who used to work with Yotam Ottolenghi.

For 2p, cut 800 grams of a butternut in 1cm slices. Put in a large oven dish. Mix with 4 cm of chopped ginger, 4 chopped garlic cloves, 1 chopped chili and a drizzle of olive juice. Bake in the oven at 200° for approximately 30 mins. Turn the slices halfway. In the meanwhile, mix 50 ml of white wine vinegar with 1 table spoon of sugar. Add 2 table spoons of walnuts. Allow to cook. Stop the fire and cool down.

Slice 1 green apple thinly. Mix with 1 table spoon of lemon juice.

During the last 10 mins of oven time put another 2 table spoons of walnuts on some baking paper and roast.

Drain the marinated nuts. Mix with the roasted nuts and grind.

Mix 2 table spoons of sauer cream with 40 grams of gorgonzola, pepper and salt.

Spread pumpkin, nuts and dressing. Finish with fresh basil ( Scully uses dragon instead) and extra cheese.
