How do you start to decide your dinner? What is your protagonist ingredient?

I definitely start my dinner with the vegetables I would like to use. I imagine certain people would start with the proteins, or even would think, let’s have some pasta today….

Anyway, my choice of today is squash, one of my favorites in colder seasons.

A chubby tasty pumpkin of 1,2 kilo is the perfect size for 2p. Cut the pumpkin in quarters, remove the seeds. Put the quarters in an oven dish, meat upwards. Spread 1 tablespoon of cumin seeds , 4 unpeeled garlic cloves and a drizzle of oil. Cover with aluminum. Bake in the oven ( ideal is the day before, together with the dinner for that evening) at 180-200° for 60 mins. Cool down ( and continue baking) in the oven.

Remove the skin of the pumpkin and garlic cloves. Mix with 200 grams of parboiled spinach. Add pepper, salt, chopped sage and 250 grams of ricotta.

Spread in an oiled oven dish. Finish with dots of luscious burrata ( 150 grams) and sage leaves.

Bake in the oven at 180° for 20-25 mins.

Serve hot.
