A special edition of my favorite magazine has published 42 oven dishes. I have loads of inspiration for the following weeks.
Roasted broccoli, potatoes, salmon and avocado caesar sauce is an excellent combination.
For 2p, put 500 grams of potato wedges, 1 red onion in wedges, 4 chopped garlic cloves, 1 chopped chili and 600 grams of chopped broccoli on baking paper. Mix with a drizzle of olive oil and 1 table spoon of dried basil. Bake in the oven at 180° for 30-40 mins ( until the potatoes are ready. Stir halfway and cover if the broccoli would become too dark.
Remove the skin and bones of 300 grams of salmon filet. Slice in pieces of 1cm thickness and approximately 6-8 cm length. Store fresh.
Mix 1 avocado, 3 anchovies filets, 2 table spoons of lemon mayonnaise and 2 table spoons of lemon juice. Taste, add pepper ( salt normally not necessary).
During the last 5 mins of baking time, spread the salmon on the vegetables.
Finish with fresh basil, black pepper and salt.
Serve with the avocado caesar sauce. Lovely dish. Thanks for the inspiration, delicious.nl.
This is a great idea. I make a creamy green goddess dressing using the avocado, but I hadn’t thought about the substitution for a Caesar.
