Another pre-prepared dinner

Saturday morning I start my course in the afternoon. Thus, in the morning there is still some time to prepare our Sunday evening meal. Iris will take care of meatballs covered with grated coconut. I take care of the side dish.

Remove the skin of 600 grams of beetroot. Slice and put in an oven dish. Mix with 4 table spoons of olive oil and 2 table spoons of balsamic vinegar. Bake in the oven at 200 ° for 30 mins. Stop the oven but leave the dish in the oven until cooled down.

Chop and fry 4 garlic cloves in a drizzle of olive oil. Add 300 grams of chopped Swiss chard. Bake and stir for a few mins. Mix with the beetroot. Add pepper and salt. Cover and store in the fridge.

After a long and intensive day, the meatballs are waiting.

Pour 200 ml of coconut milk on the vegetables. Put back in the oven at 180° for 30 mins. Spread 3 table spoons of grinded pistachio on the vegetables. Put back in the oven for 5 mins.

Serve the coconut meatballs with this colorful side dish.
