Cooking in advance

This weekend I’ll be having my counseling course in Florence. Although I know Iris can cook, I plan the weekend menu in order to have more quality time together tomorrow and Sunday evening.

With a bit of delay I received the February and March editions of my favorite cooking magazine ‘ ‘.

The gnocchi recipes always get my attention because Iris really loves them. Ready made gnocchi are super easy to mix with vegetables and cheese and finish ( another day) in the oven.

This one has to be awesome.

Chop and fry 4 garlic cloves and 2 red onions in a drizzle of olive oil. Add 700 grams of washed and chopped radicchio, 1 table spoon of dried badil and 1 small can of anchovies. Bake until just before being all dente. Add pepper. Mix with 250 grams of drained burrata or mozzarella. Put in an oiled dish. Cover and store in the fridge.

Put 25-30 mins in the oven at 200° until hot and golden brown.
