This morning I removed a nice piece of salmon from the freezer. After a long day outside easy cooking is welcome and baking paper is the best tool to do this.
Come home, preheat the oven at 180-200°.
Use two oven trays, cover them with baking paper.
Wash 250 -300 grams of potatoes pp. Cut them in quarters. Dry them and put on the oven tray. Add a drizzle of olive oil, 1/2 teaspoon of spicy paprika powder, some salt. Bake in the oven for approx 40-60 mins. Stir halfway.
Cut long radicchio in halves, round radicchio in quarters (300-400 grams pp). Put on the other oven tray on baking paper. Spread some anchovies, chopped garlic, dried basil, black pepper and a drizzle of olive oil on each piece. Bake at the same time as the potatoes, during approx 30-40 mins.
During the last 10-15 mins of total baking time, put the salmon (150-200 grams pp) on the oven tray with the radicchio. Spread some chopped garlic, a chopped chili, some slices of lime, pepper and salt on the salmon.
Spread the oven baked meal on a nice plate and enjoy the delicious combination.
