Pizza bianca

Again, a recipe based on the latest Ottolenghi, pizza bianca.

Iris is waiting for our future ‘cinema’-room to be ready. The boxes with DVD, CD and old video tapes will be unpacked soon. The red velvet sofa (also sleeping chair for guests) may soon be freed from its removal packaging.

This pizza bianca will be great for a ‘dinner with movie’.

A ready made rectangular pizza dough is perfect for 2p.

Mix 125 grams of mascarpone with 4 chopped garlic cloves, 1 small can of anchovies, also chopped (keep the oil), 8 chopped sage leaves, zeste of 1 lemon and black pepper. Spread the mixture on the dough.

Slice 2 medium sized potatoes thinly. Mix the slices with the oil of the anchovies, some pepper and salt. Spread the slices on the pizza.

Bake in the oven at 200° for 20-25 mins. Finish with some grated pecorino. Serve with fresh babyspinach.
