It would be a lovely idea to have a family reunion in our house one day, but our house is not yet ready to have so many guests, and my mother would never consider to travel, even if her health condition would allow her, during that period. Thus, apart from getting new windows, floors I prepare our leave to Belgium.
Iris will prepare the appetizers for her family. I will prepare the while dinner, with both of my daughters, and for the first time in my brothers house. The 24th is the day to prepare everything and the 25th the whole family will join us.
What offers the fridge for our last evening? A cauliflower, some North Sea shrimps in the freezer and some puree potatoes.
Boil the peeled and chopped potatoes and the chopped cauliflower in salted water for 15 mins. Drain. Make a puree.
Prepare a bechamel sauce with 1 table spoon of butter and 1 table spoon of flour, 200 ml of milk and 150 ml of soy cream. Season the bechamel with curry powder, pepper, salt, 3 chopped garlic cloves and a handful of chopped parsley.
Take an oiled oven dish. Put first the puree in the dish. Spread 200 grams of North Sea shrimps on the puree. Finish with the bechamel and some grated parmigiano.
Put in the oven at 180° for approx 30 mins.
Empty fridge, ready to go!
