We have a lot of different mushrooms in our garden, but sadly enough I don’t know anything about mushrooms, and decide to leave them and buy some in the supermarket. The variety here is much less than what I could find in Belgium, so it’s possible that forest mushrooms never arrive in the supermarket because they are eaten immediately.
For a mushroom soup for 4p, buy 600 grams of different mushrooms. Chop and fry 4 garlic cloves in 1 table spoon of butter. Add the mushrooms and bake. Add 1.5 liter of stock (chicken or vegetal, preferably home made). Allow to simmer until the mushrooms are al dente. Add 100 ml of cream. Taste, add pepper and salt. Finish with 100 grams of baby spinach.
