Cold and snowy Siena

My monthly delicious.nl magazine has arrived while being in Belgium. It’s always a nice moment to browse the magazine for the first time ( ‘the first cut is the deepest’ ;-)). I cleaned the fridge and freezer today and found a pack of gorgonzola. How is it possible to find gorgonzola in the freezer? Before leaving the house for a longer period I tend to inspect our fridge thoroughly and store every freezable ingredient in the freezer to prevent any waste. Thus, this gorgonzola is still perfect in order to process. I buy 1 large bell pepper (400 grams) and use other ingredients, found in the cupboard.

Chop 2 red onions. Fry them in a bit of olive oil. Add 4 chopped garlic cloves and 1 spicy little pepper. Add the chopped bell pepper and 1 table spoon of thyme. After 5 mins, add 1 large and 1 small can of passata. Allow to simmer. Add 120 grams of crushed leftover of dry large pasta (shells, lasagna leaves, tubes). Boil for another 5-10 mins. Mix the pasta dish with ½ of the package of gorgonzola ( total amount 150 grams).Taste and add pepper, salt and/or sugar. Pour in an oiled oven dish. Finish with a mixture of some bread crumb, or 1 almost lost tortilla in pieces, the other ½ of the cheese and a drizzle of olive oil. Bake in the oven at 180° for approx 30 mins. Mmm, nice and warm inside.
