During my childhood chicken was often on the menu on a Sunday, and it still is. With a little help from my friends ;-), the ‘two greedy Italians’, Carluccio and Contaldo, ovenbaked chicken with artichokes, onions, potatoes and rosemary. I serve a main course for 3p (yes, yes, Elodie is our table guest for a few days). Clean and cut 10 small fresh (if not fresh, use the artichokes preserved in water) artichokes in quarters. Put 1 kilo of good quality chicken, in pieces (PS keep the leftover for a simple chicken broth cooked in water and salt only) in an oven dish. Add the artichokes, 1 chopped white onion, 4 roughly chopped garlic cloves, 750 grams of clean potato wedges, 2 table spoons of fresh chopped rosemary, a drizzle of olive oil, pepper and salt. Mix everything with your hands (love this!!). Bake in a preheated oven at 180° for 45-60 mins. Mix the ingredients halfway. The dish is ready when the chicken is cooked and the potatoes are tender. Serve with fresh rosemary and a green salad.
