Pasta with lots of vegetables

Our dearest dog, Pillo, is recovering from a real bad infection and needs extra care. Cooking and shopping is currently limited. However, never forget to take care of yourself while taking care of others, is a holy rule in medicine, and in life in general.

Start in the morning or the day before. Take a flat oven dish. Put 250 grams of halved prune tomatoes (skin below) in the dish. Add 1 finely chopped red onion, 4 chopped garlic cloves, 1 chopped spicy little pepper, salt, a pinch of sugar, 1 table spoon of dried oregano on the tomatoes. Finish with a drizzle of olive oil and put in the oven at 180° for 20 mins. Mix with 500 grams of blanched green beans and 1 chopped courgette. Cover and store.

Before dinner, put the dish in the oven at 180°. Boil some pasta. Mix pasta and vegetables. Add 200 grams of mozzarella pieces and serve. Pillo snores and we enjoy our meal.
