I’m a real fan of the books of Jamie Oliver. His recipes are clear. His dishes are mostly in balance although I always add vegetables. While reading his books you feel his great passion for good food and cooking. A delicious recipe out of his book ‘Jamie’s Italy’ is ‘Spaghetti con gamberetti e rucola’. 200 gr of peeled raw scampi pp (remove intestinal canal) will be enough. Cook the pasta following the instructions. Fry a few cloves of garlic, a small spicy pepper and a chopped white onion, add the scampi. After one minute add a small amount of white wine and a puree made of halfdried tomatoes (1 spoon pp). Let it simmer during a few minutes. Mix the pasta with the sauce. Add some lemon juice and some of the pasta water. Mix with a few hands full of rucola. The amount of veg is surely not enough for the day. Serving a soup before the pasta will help you to increase that amount. Extra rucola and some raw cherry tomatoes can also help.
