Friday wrap= start of the weekend

Friday remains -working or not- a special day to combine with some ‘lazy’ food, looking forward to a movie, or just sharing with your family or friends.

The request menu for today is wraps. If you live in Italy, more than in Belgium, you will mostly only find seasonal vegetables in the supermarket. So what to buy to get some sun on your plate?

Radishes, tomatoes, cucumbre, iceberg salad, and paprika all chopped in little pieces will give your table a wonderful colour. Of course a wrap meal will ask for guacamole, for a garlic sauce, marinated meat (we always use chicken) and a tortilla-like pancake. There are several versions for guacamole but standard 1 or 2 avocados, some lemon juice, a garlic clove and pepper and salt (you can always add coriander, tomato, chili and red onion). For the garlic sauce I prefer greek yoghurt with 0% fat, a garlic clove, some olive oil, pepper and salt, and if you like a green touch parsley or coriander.

Chop the chicken in small pieces and mix with one or two spoons of olive oil, a clove of garlic, a mixture of herbs (all grinded: cumin, turmeric, cinnamon, pepper, cayenne, paprika, ginger, salt, coriander). Bake before serving and keep warm. I prefer the oven to heat the tortillas instead of the microwave.

The normal way to eat this meal is ‘wrap-like’, but my prefered way is ‘pizza-like’ to guarantee a huge amount of vegetables on your plate.
