We did an amazing hike ( Reinaknuten) today. We hesitated to stay on the starting point, but it was too obvious camping was not allowed ( what’s the difference between camping and parking?).
We continued our way and arrived near Dam Lyngsvatn, a beautiful spot which made us believe we landed on the moon.
What can I prepare with carrots, cucumber, tomatoes? I decided to prepare a couscous with a vegetable stew.
Clean and chop 500 grams of carrots. Start frying them in a drizzle of oil ( the olive oil is finished, so I have some rapeseed oil now). Add 1 table spoon of curry powder and 2 teaspoons of cumin seeds. Stir and fry. Chop 1/2 cucumber, 2 red onions and 4 garlic cloves. Add to the pan. Stir regularly.
Add 250 grams of chopped cherry tomatoes. Stir. Add some salt. Add some water if needed. Continue to bake. As protein source, add 70 grams of crushed cashew nuts.
Prepare the couscous. Pour boiling salted water on 120 grams of couscous. Cover. Allow to rest.
Once the vegetables are al dente, add a handful of chopped black olives. Taste, add pepper and salt. Finish with fresh coriander.
Serve with the couscous. Add some rose harissa for extra flavor.
