Celebrating Midsommar

As we are Midsommar weekend I thought it would be lovely to prepare a dinner with the typical ingredients such as new potatoes, dill and strawberries.

I must say those Swedish strawberries are incredibly delicious.

What did I buy? : strawberries ( of course), 500 grams of new potatoes, 250 grams of local green asparagus, a bunch of fresh dill, Greek low fat yogurt, baby spinach and 250 grams of frozen fish ( it’s really hard to find varieties of fresh fish and it’s all very expensive).

Wash the potatoes. Cut them in quarters. Boil in salted water, seasoned with some bay leaves, until done. Drain. Reheat the pan. Add a drizzle of olive oil and some butter. Chop and bake 4 garlic cloves, 2 chili. Add the potatoes and the green asparagus. Stir regularly. Move the vegetables at one side of the pan. Add the defrosted fish, cut in cubes, during the last 5-7 min. Bake at both sides. Then mix gently with the potatoes.

In the meantime, clean 250 grams of strawberries. Mix with 100 grams of baby spinach and fresh dill. Season with balsamic vinegar. Set aside.

Mix 200 grams of low fat Greek yogurt with pepper, salt and chopped fresh dill. Set aside.

Season the potatoes with fresh dill.

Serve all together. Enjoy a Midsommar dinner, docV style.

  2. Sounds all delicious and never tried the strawberries with baby spinach….will do in Spring. For us in SA, Western Cape, the longest night and shortest day…Winter! So making lots of stews, lovely soups…
