Halloumi and grillkäse everywhere in Germany

We are still in North Germany, near Rostock. Yesterday we did an amazing walk, a loop through the woods and along the incredible coast with chalk cliffs. We love to stay on more isolated places, being sure we have enough water and enough space in our toilet tank ( important detail🙃).

I love to discover new supermarkets and, sorry, Germany, until so far I haven’t found a number one. The only big advantage is : there is halloumi, which is a fantastic ingredient.

Tonight we will have couscous. I bought 600 grams of courgettes and 250 colored cherry tomatoes. Chop and fry 1 red onion and 4 garlic cloves in a drizzle of olive oil. Stir. Add the chopped courgettes, a handful of thyme ( mixture of normal and lemon thyme of my little garden). Season with black pepper and salt. Stir and continue to fry. After 15 minutes, add the halved tomatoes.

In the meantime cover 120 grams of couscous with salted boiling water. Cover and allow to rest.

Bake 200 grams of halloumi, cut in cubes.

Add chopped fresh mint to the couscous and use a fork to loosen the grains.

It took me 30 minutes to prepare this dinner.
