The ‘One Pan Perfect’ cookbook from Donna Hay is a topper. The following recipe is awesome and contains Italian ingredients only.
The following dish is for sure more than enough for 3p ( or 2p if you’re really hungry).
Clean and wash 500 grams of fresh spinach. Chop 4 garlic cloves. Heat a pan with a drizzle of olive oil. Add the garlic. Stir and fry. Add the drained spinach, 2 teaspoons of dried basil, 2 teaspoons of dried thyme, pepper and salt. Once ready, drain and chop. Set aside.
Wash 2 medium sized courgettes ( 400 grams approximately). Slice with a potato peeler or mandoline. Set aside.
Slice 200 grams of mozzarella. Grate 50 grams of parmesan.
Mix the spinach with 250 grams of ricotta. Season with pepper and salt. Add 2 table spoons of chopped fresh basil ( Donna Hay prefers mint and parsley). Mix.
Oil a round oven dish suitable for the lasagna. Start with 1 layer of thin lasagna sheets. Continue with 1/3 of the spinach ricotta mixture, 1/4 of the courgettes, pepper and salt. Spread another layer of lasagna and continue. Finish with lasagna, courgettes, grated parmesan and a drizzle of olive oil.

Bake in the oven at 200° for 40-45 minutes. Buon appetito 😍.
