Gnocchi, taleggio and radicchio = cosy food

It’s really cold, outside and sadly enough also inside ( 😠). This dinner will hopefully add some degrees.

Chop 4 garlic cloves and 1 red onion. Heat an oven resistant pan. Fry the onion and garlic in 2 table spoons of olive oil. Add 4 chopped pickled anchovies and 1 table spoon of dried thyme. Wash and chop 750 grams of radicchio ( I prefer the long ones, from Treviso, for their less bitter taste). Add to the pan. Bake and stir for approximately 10 minutes. Boil 500 grams of ready made gnocchi in salted water. Add to the pan. Add some of the liquid. Season with pepper and salt. Finish with 100 grams of sliced taleggio.

Reheat in the oven at 200° for 20 minutes, until golden brown. Lovely winter food. Thanks delicious.nl.
