Pagello Fragolino

It could be the name of a poet, but it’s a fish. Pagello fragolino is a beautiful sea bream. I asked Mirco, the fishmonger, to bring me a local, seasonal whole fish. What a name!

Reading online the most common way to prepare would be ( again) with tomatoes. A gorgeous cauliflower is our side dish today.

Wash and chop the cauliflower. Spread on an oven tray covered with baking paper. Mix with 4 chopped garlic cloves, 1,5 table spoons of the French curry powder mixture vadouvan, salt and 2 table spoonsof olive oil.. Bake in the oven at 200° for 40 minutes. Stir halfway.

Prepare the fish. Season with salt and vadouvan. Fill it’s belly with lemon slices. I use the delicate bergamot lemon. Put the fish in an oiled oven dish.

Put the fish in the same oven at a higher level. Bake for 25-30 min.
