An early good tasting pumpkin is waiting for our evening meal. Remove seeds and skin of a small pumpkin, approximately 1 kilo. Cut in cubes. Spread 2 table spoons of za’atar, some salt and a drizzle of olive oil. Mix. Spread on baking paper on an oven tray. Bake in the oven at 200° for 40-60 minutes. Stir halfway and add 4 chopped garlic cloves and 1 sliced chili.
In the meantime, mix the zeste and juice of 1 lemon with a small jar of low fat Greek yogurt, 1 table spoon of chopped fresh mint, pepper, salt and a little drizzle of olive oil.
Serve the pumpkin with the yogurt sauce, nigella seeds and a lot of fresh parsley as side dish.
