No studying anymore, what a relief. Although I still have an oral part to do next weekend, the written exam is finished. I can fully enjoy our first guest of this year. Before her arrival we have to eat the red cabbage, because Dorianne really hates it 😉.
Chop a portion of red cabbage (approximately 500-600 grams for 2) in thin strips or use the kitchen robot to do the job. Mix the red cabbage with a chopped apple. Chop 1 red onion and 6 dates. Mix the onion and dates with red wine vinegar. Allow to marinate for minimal 30 mins. Mix everything together. Add extra vinegar, pepper and salt. Finish with a drizzle of olive oil. Store in the fridge.
Chop 500 grams of sweet potatoes in cubes. Put on baking paper on an oven tray. Add 4 chopped garlic cloves, fresh thyme leaves, pepper and salt. Spread some olive oil and bake in the oven at 200° for 30-40 mins. Stir halfway. Mix the potatoes with grated parmesan before serving.
Two lovely side dishes for any season.
