Gnudi are naked ravioli. This recipe is easy and delicious, inspired Janneke Philippi of delicious.nl. The amount of vegetables is doubled.Put 800 grams of halved cherry tomatoes in a dish. Spread some oil pepper, salt, 4 chopped garlic cloves and 1 table spoon of dried basil. Roast in the oven at 180° for approximately 30 mins. Stir halfway.In the meanwhile, mix 250 grams of fresh ricotta with 3 table spoons of grated parmesan, 1 egg yolk, 70 grams of flour 00, pepper, salt and 3 table spoons of chopped fresh basil. Moisture your hands to create 12 gnudi for 2p. Put them on a floured surface. Boil some salted water. Once boiling, add the gnudi, one by one. If they appear at the surface of the water, they are ready.Serve the gnudi on the roasted tomatoes. Finish with grated parmesan and fresh basil.
