Lots of colors and lots of flavor, that’s what I always try to combine in my daily cooking. Heat the oven at 200°. Clean a large bunch of fresh carrots and a large bunch of radishes. Halve them. Spread on baking paper on an oven tray. Mix the carrots with a drizzle of olive oil, 1 teaspoon of concentrated juice of pomegranate ( that’s how I make the melasse by cooking pomegranate juice until you obtain a thick syrup which can be stored in the fridge), fresh thyme, 1 teaspoon of cumin seeds, 4 chopped garlic cloves, 1 chopped red onion and a chopped fresh chili. Bake in the oven during approximately 30 mins. Stir halfway.
Mix the juice of 1 lemon with 1/4 teaspoon of cinnamon powder, 1/4 teaspoon of paprika powder, 4 chopped medjool dates, pepper and salt.
Mix the carrots with the dressing. Serve with some greens and lucious italian burrata.
