Cheese lover

My calcium intake is sufficient. I’m a real cheese addict, although I try to consider the intake of daily kcal. The last edition of has a few fabulous recipes with cheese as protagonist.

Chop 2 large leeks in pieces of 1-2 cm. Put in a buttered oven dish. Add pepper, salt, 1 table spoon of dried basil and a drizzle of olive oil. Bake in the oven at 180° for 20 mins. Chop the fresh leaves of 8 beetroots (used in the recipe a few days ago). Heat a pan. Add a drizzle of olive oil. Bake the leaves with 4 chopped garlic cloves.

Mix the beetroot leaves with the leek. Spread 150 grams of crumbled feta cheese. Put back in the oven for approximately 15 mins. Finish with balsamic vinegar and lemon wedges.
