Frozen fish, a perfect compromise

Yesterday I prepared the shopping list for a menu for 2 for 1week. A few things were not available, but I’ll manage to find some alternatives. Toilet paper seems not to be a problem here, but today I could not find any fresh eggs.Clean and chop 500 grams of potatoes. Put them on baking paper. Spread some olive oil. Bake in the oven at 180° for 20 mins. Clean 500 grams of green asparagus. Mix with the potatoes. Add 4 chopped garlic cloves and 1 teaspoon spoon of dried dill. Bake for another 15mins. Stir. Spread 300 grams of frozen monkfish. Bake for another 15 mins. Stop the oven, add 400 grams of fresh, shortly parboiled spinach, pepper and salt. Serve with a dressing of 2 tablespoons of dijon mustard, 2 table spoons of yoghurt, 2 teaspoons of honey, some lemon juice, pepper and salt.
