Today I have been cleaning like crazy. My whole body aches, although I’m not convinced that it’s the healthiest way to exercise. Anyway, it’s almost done …for this week. My appreciation for our Luana will be even more after the lock down period. After the cleaning, I decided to do my every other day 5km running, being more than convinced my body wouldn’t allow me tomorrow🦹♂️.
An all-in-one dish is still manageable.
Remove the skin of 500 grams of potatoes. Chop in small cubes. Put on baking paper on a baking tray. Rinse 1 small cauliflower. Chop in little roses and cubes ( no waste !). Put on the baking tray. Add 4 chopped garlic cloves, 4 cm of chopped fresh ginger, 1 large table spoon of garam masala, 1 drained can of chickpeas, pepper, salt and a large drizzle of olive oil.
Bake in the oven at 200° for 40 mins. Stir now and again.
Finish with some fresh basil. Serve.
