Shrimps and spinach, awesome couple

Even when my kids were small candlelight dinner was a rule. A cozy table stimulates the appetite ( not that I really need to be stimulated 🤣). If we travel, I will always find some space for a candle and some lighter. No travelling, no visitors, but the etiquette remains holy.

Boil a small cup of black integral rice until al dente (40 mins). Drain.

In the meanwhile, chop and fry 4 garlic cloves in a drizzle of olive oil (fresh chili is not available for the moment). Add 500 grams of washed fresh spinach. Stir and bake for a few minutes. Mix with 2 table spoons of capers ( on vinegar, drained but not rinsed), dry chili flakes, pepper and salt. Mix with the rice.

Oil a oven dish. Spread the spinach rice mixture. Spread 300 grams of defrosted shell free shrimps and 200 ml of coconut milk. Finish with grated coconut.

Bake in the oven at 200° for 20 mins.
