Mackerel is a real cheap fish. Mackerel filets are perfect to store in the freezer. So if they are available I will always buy a portion for a later occasion. 300 grams is a perfect portion for 2p.
This recipe, which I found in the Christmas edition of delicious.nl is goodloocking and tasty. Blanch 8 large leaves of a Chinese cabbage in salted water. Drain and dry.
Mix the zeste of 1 orange with 4 chopped garlic cloves, 1,5 table spoon of olive oil pepper and salt. Put the mackerel filets in the marinate. Use 1/2 of the orange for juice and the other 1/2 for its meat.
Drain 1 can of roasted bell pepper. Slice 1 red onion. Chop 1 table spoon of black olives.
For each package, start with 2 leaves of the cabbage. Put 1 mackerel filet on the cabbage. Spread some of the oil mixture on each side of the mackerel. Cover the mackerel with some bell pepper, some orange, some red onion and some olives. Cover with another marinated mackerel filet. Finish with pepper and salt. Close the cabbage to create a package. Put in an oven dish. For 2 p, 2 packages each. Bake in the oven at 180° for 20 mins.
Put the juice of the other 1/2 orange in a small pan. Allow to simmer until the amount has reduced slightly. Mix with the leftover of the bell pepper, pepper and salt.
Serve all together with some oven baked potatoes.
