Family time in Belgium

I’m back after a few days in Belgium. I always try hard to give ‘quality’ priority to ‘quantity’, but I will have to practice more. One of my daughters, Lisbet has a lovely appartment in Leuven which has become my ‘private Airbnb’. I love to visit local supermarkets and buying a few ingredients which I cannot find here. The first evening Lisbet spoils me with some North Sea shrimps, green asparagus, some salad and French fries. 😋

She ‘allows’ me to use her kitchen. After busy days and a lot of talking I can use some me-time in the kitchen.

It has been a while since I prepared vegetables filled with minced chicken meat. Minced chicken meat in Belgium is juicy and tasty(perhaps I don’t want to know why😉). For 2 persons, buy 2 red bell peppers and 2 tomatoes to reach the vegetable quota of the day. Half and clean the bell pepper, empty the tomatoes (half them first or cut a lid off first). Mix 300 grams of chicken meat with 4 chopped garlic cloves, 1 chopped onion, 1 table spoon of pine nuts, 1 teaspoons of cumin powder, 1 table spoon of chopped coriander and mixed chicken herbs. Fill the vegetables

Put in an oiled oven dish. Bake in the oven at 180°for 20 mins. Add 500 grams of small precooked potatoes. Bake for another 20 mins. Serve with fresh coriander.
