For 2 p, find a small sized(approximately 800-1000grams) tasty pumpkin. Cut the pumpkin in 2 halves. Remove the seeds. Brush some olive oil on each pumpkin. Put on baking paper. Bake in the oven at 180° for 30-40 mins.
Chop an fry 1 onion and 4 garlic cloves in a drizzle of olive oil. Add a few chopped sage leaves. Stop the fire.
Mix 200 grams of mozzarella cubes with a handful of chopped fresh parsley, 50 grams of chopped walnuts with the onion and garlic mixture and the chopped meat of the pumpkin. Add pepper and salt. Fill the pumpkin halves with the mixture. Clean a few spring onions and put them on the same baking tray.
Bake in the oven at 180° for 20 mins.
Make a dressing with 1 teaspoon of grain mustard, 1 table spoon of olive oil, 1 table spoon of white wine vinegar and 1 table spoon of water.
Serve all together….with some fresh baby spinach.
