A tajine is a functional beauty in your kitchen. You can buy fancy ones, for too much money or simple, authentical ones for a reasonable price (especially in certain neighborhoods in big cities.
Mix 200 grams of ricotta with 600 grams of chopped courgettes, 4 chopped garlic cloves, 1 chopped chili, the zeste of 1 lemon, 200 grams of chopped mushrooms, 50 grams of pine nuts, 50 grams of raisins, and the juice of 1/2 of a lemon. Add pepper, salt and 2 table spoons of chopped fresh sage leaves. Put everything in a tajine. Mix some olive oil. Cover and bake for 45-60 mins in the oven at 220°. Stir halfway.
Prepare a small cup of couscous, following the instructions.
