Thai noodle salad

A lot of recipes come back but always in little different versions and thus it creates variety in the daily cooking. So often, at first sight, a cookbook isn’t really so special but while reading it creates possibility. Jamie Oliver’s books are a perfect example ( or is it just a perfect excuse to buy me another book 😉).

For 2p, mix the paste of 4cm of fresh ginger with the zeste of 1 lime, the juice of 1 lime, 1 table spoon of soy sauce, 1 table spoon of sriracha chili sauce, 1/2 of a table spoon of sesame oil and 1 table spoon of olive oil.

Chop 1 chili, 3 spring onions, 2 carrots, 2 stems of chicory and mix with the dressing.

Roast 40 grams of peanuts in a dry pan and grind. Roast 1 teaspoon of sesame seeds. Chop some of fresh coriander and some fresh mint leaves.

Chop and fry 2 garlic cloves in a drizzle of olive oil. Add 250 grams of mushrooms and bake until al dente.

Prepare 100 grams of rice noodles following the instructions. Drain.

Mix everything together. Finish with the sesame seeds and fresh coriander. Add soy sauce if necessary.

PS ideal dinner movie
