Fish and potatoes in fabulous croquettes

Pasteis de bacalhau are more than delicious, easy to prepare in advance, as snack, starter or, in combination with other dishes, as lunch.

Janneke Philippi, writer in magazine, inspires me once more.

The most important step in the preparation is the desalting of the bacalhau or salted cod. Rinse 400 grams of salted cod. Put in water in the fridge. Rinse and renew the water regularly, at least 2-3 times. This will take a minimum of 12 hours.

Chop and fry 2 garlic cloves and 1 onion for a few mins.

Clean 300 grams of potatoes. Boil until tender.

Put everything together. Add 1 egg, the zeste of 1 lemon and 2 table spoons of flour. Make a smooth puree. Taste, add parsley and chili powder.

Create chubby croquettes with wet hands. Put the on baking paper. Spread some olive oil. Bake approx 30 mins in a hot oven at 200°. Turn halfway. ( Janneke bakes them in a pan).

Serve with lemon wedges.
