Artichokes on a piadina

For 2p, 2 piadine or Italian flat breads, 2 garlic cloves, 5 small fresh artichokes ( 1 can of artichokes as alternative), 200 grams of mozzarella, 2 table spoons of black olives, 60 grams of sundried tomatoes on oil and some rocket salad is all you need tonight.

Clean and chop the baby artichokes in quarters. Spread some lemon juice to prevent discoloring.

Mix the sundried tomatoes, the garlic in the blender. Taste, add some pepper.

Spread the tomato paste on the piadine. Spread the artichokes, the olives and the mozzarella.

Bake in the oven at 200° for approx 20 mins. Finish with rocket salad.

Quick pizza with delicious ingredients.
