Before our move to Italy, the original plan was to move to the area of WashingtonDC. We went house hunting and got to know really wonderful people, such as Kathy and Peter, but the gut feeling about moving to US wasn’t right. It took a few weeks before deciding not to go, but Kathy, Peter and Old Bay Spices are more than memories.
Anyway, moving to Italy was in every aspect a far better choice, and the old bay spices moved with us.
Clean and chop 400 grams of fresh squid. Mix with 1 table spoon of old bay spices. Store in the fridge.
Chop and fry 4 garlic cloves, 1 chili and 2 fennels in a drizzle of olive oil. Add 1 teaspoon of dried basil. Bake and stir. Add 100 ml of white wine. Bake and stir.
Once the fennel is al dente, add the squid and bake shortly.
Add 125 ml of light cream. Serve and enjoy.
