Wind and rain = perfect weather for a chicken stew. We spend a lazy Sunday in a house full of boxes with two anxious cats, a senior sleepy dog in our cozy kitchen. The extra hour of sleep is a nice gift ;-).
Prepare the stew in the morning and finish before dinner.
Chop and fry 1 large onion, 4 garlic cloves and 1 pepperoncini in a mixture of butter and olive oil. Add 300 grams of chopped chicken breast, 2 teaspoons of chicken herbs, 2 teaspoons of spicy paprika powder, 2 teaspoons of cumin seeds. Bake and stir. Add 2 chopped bell peppers. Bake and stir.
Add 1 can of cherry tomatoes and 250 grams of mushrooms. Simmer for approx 15 mins. Stop the fire and cover the dish.
Filippo Cresti, our dear geometra, brought us a nice welcome gift, a bottle of red wine and penne, from their family fattoria = two delicious ingredients for our evening meal. Thanks, Filippo!
Finish the pasta dish with sour cream and fresh parsley!
