Pomegranate season

A pomegranate tree is beautiful, in the spring with its awesome flowers, and in automn with its delicious fruit, a real must have in our garden.

Slice 1 red onion. Mix with the juice of 1 lemon, some red wine vinegar, 1 table spoon of honey and 5 chopped dates.

Put 250 grams of halloumi on baking paper. Add pepper,  a spoon of cumin seeds,  a few chopped garlic cloves and a drizzle of olive oil. Bake in the oven at 200° for approx 20 mins. Turn halfway and add  some pita bread in smaller pieces (mix with the oil on the baking tray).

Mix 150 grams of a mixed green salad (ruccola, spinach, dandalion,…) with the onion mixture. Spread the halloumi and the pita bread. Finish with the seeds of 1 pome granate (spanky spanky) and a drizzle of good olive oil.

One of the good reasons to have your own pomegranate tree;-).
