Green green green

My final harvest of pumpkin/courgette is collected : 3 baby creatures, cute but not enough for our daily vegetable quotum. I hope they don’t mind to be served in the company of a half green cabbage and a half with cabbage, both waiting for another recipe.

It’s rather boring, but, prepare a baking tray with baking paper.

Clean the cabbages. Slice them in large pieces of 1.5-2cm. Mix 3 table spoons of olive oil with 4 chopped garlic cloves, 2 teaspoons of dried thyme, 2 teaspoons of savory, pepper and salt. Brush the mixture (keep some for the courgettes) on both sides of the cabbages. Bake in the oven at 180-200°. Turn the cabbages halfway ( after approx 20 mins). Put the courgettes on the same tray. Brush some herbal mixture on each side. Bake the vegetables for another 20 mins.

Prepare meatballs. Mix 300 grams of minced meat (mixture of sausage meat and chicken) with 1 chopped garlic clove and 1 teaspoon of dried thyme. Roll meatballs of 3 cm. Bake in the oven for approx 30 mins.

2018-09-24_09.08.12[1]The total oven time is 40-45 mins. Serve all together. No carbs today.
