Caprese in the oven, a tribute to my mother

The combination of mozzarella, tomato and basil,, known as caprese,  with a drizzle of balsamic vinegar, a drizzle of olive oil, pepper and salt is for my mother and mother in law a topper. This version could become the topper in the colder season.

For 2p, peel and chop 500 grams of potatoes. Put them in a nice oven dish. Add a drizzle of olive oil. Start baking in the oven at 200°. After 20 mins, add 4 chopped garlic cloves, 800 grams of cherry tomatoes and 1 chopped pepperoncini. Put back in the oven and continue the baking. After another 20 mins stir,  add 1 table spoon of balsamic vinegar, pepper and salt. Spread 250 grams of drained mozzarella balls (bocconcini). Bake for another 10-15 mins until the cheese has melted.

Finish with fresh basil and enjoy the warm version of caprese.
