When we moved to Italy I tried hard to empty the cupboards as much as possible , but still we moved 8000 kilo of stuff!!!! Old weckjars moved with us and I never really used them (shame on me) until today.
For 2p boil 400 grams of peeled and cut new potatoes for 2 mins in boiling water with a drizzle of white wine vinegar. Drain and mix with pepper, salt, fresh parsley and a drizzle of olive oil.
Cut 18 cherry tomatoes in quarters. Mix with 1 teaspoon of dried oregan, pepper and salt. Mix cubes of 300 grams of firm white fish with 1 teaspoon of dried thyme, pepper and salt. Chop 4 spring onions and 4
garlic cloves and mix with 1 teaspoon of dried oregano and a drizzle of olive oil.
For 2p fill 2 large weckjars in layers. Start with the onions and garlic, continue with ½ of the potatoes, ½ of the tomatoes, 50 grams of fresh baby spinach, the fish, other ½ of the potatoes, other ½ of the tomatoes. Finish with the baby spinach and close the pots.
Store in the fridge until ½ before dinner time. Put a layer of 5-7 cm of water in a large pan. Allow to cook. Put the jars in the water and cook for 30 mins.
Serve! Finally I can say that the 8000 kilo was not useless ;-).
