Mexican food in Italy

For 2p clean and chop 200 grams of carrots and 4 garlic cloves. Bake them soft in the microwave. Drain and mix with 50 grams of whole grain flour, 60 grams of grated gruyere, 2 eggs, 2 teaspoons of curry powder, 1 table spoon of fresh parsley. Taste, add  a drizzle of olive oil, pepper and salt. Spread the paste on baking paper in 4 discs. Bake in the oven at 200° for 15 mins. Turn and bake for another 5 mins.

In the meanwhile chop 400 grams of red cabbage thinly. Mix with a dressing of lime, olive oil, pepper, salt and sesame seeds. Add some dandalion salad for extra color.

Make a humus with 1 avocado, 200 grams of drained chickpeas, 1 table spoon of tahini, 3 table spoons of lime juice, pepper, salt and some olive oil.
