1000 grams of frozen spinach leaves for 2p seems a lot for many people, but not for me ;-). I could eat it pure, just with some pepper, salt, good olive oil and preferably a few garlic cloves, but then I’m pretty sure my audience would not agree.
Another way to prepare? Defrost the spinach and drain thoroughly. Chop roughly. Mix with 250 grams of ricotta cheese, pepper, salt, 1 table spoon of dried basil, 4 chopped garlic cloves, a handful of chopped fresh basil and lemon zeste of 1 lemon. Grate 40 grams of parmigiano.
Oil a rectangular oven dish. Start with a spinach layer, spread some parmigiano and cover with whole grain lasagna sheets. Repeat and finish with parmigiano.
Bake the lasagna in the oven at 180° for 30-40mins. A successful trio!
