Stuffed tomato, stuffed bell pepper, stuffed eggplant, ….today’s menu stuffed onion and courgette.
Stuffed onion is a typical side dish (contorno) in Tuscany : red onions stuffed with some meat, cheese and spices. The offer of new onions is increasing. Although they look red outside, inside they’re white, and have a great taste. For 2 p (we will eat this as main course) 4 medium sized onions, 2 round courgettes, 300 grams of minced meat, some home made breadcrumb, garlic, thyme and parsley. I skipped the cheese, but it’s of course optional.
Boil the onions for 5 mins. Drain them and cool down. Scoop onions and courgettes (halved is easier). Chop 4 garlic cloves, the scooped content, 4 table spoons of fresh parsley in super small pieces. Add 1 table spoon of dried thyme, the minced meat ( for us preferably chicken), pepper, salt and 2 table spoons of home made breadcrumb and mix thoroughly. Fill the onions and courgettes and put them in an oiled oven dish. Bake 20 mins at 180°. Buon appetito.
