A wonderful buffet

Different structures, different ingredients, different colors, different flavors (but keep the same style), different diets. It sounds difficult, but in fact it is easier to think about all this than to serve 1 big meal and realizing that a few people don’t like it or cannot eat it for different reasons. Put all the dishes on a long table or cupboard in order to create a self-service. Use the same colors of plates or go for some more color by choosing different shapes and different colors of plates (creates the same effect as if you would ask everybody to bring one dish).

  • Green vegetables, ovendried tomatoes and halloumi

2017-05-21_23.27.43[1]The oven dried cherry tomatoes and the ovendried tomatoes of the following recipe can be done the day before, or even longer. Start with the larger ones and after 1/2h add the cherry tomatoes.

Put the halved tomatoes (approx 400 grams) on baking paper. Add some pepper and salt and a drizzle of olive oil. Count 50 mins in the oven at 140°.

Chop 600 grams of courgettes in slices of 1/2cm. Chop 500 grams of green asparagus in pieces of 4 cm. Mix the courgettes, the asparagus, 2 chopped garlic cloves, 2 table spoons of chopped fresh basil and a good drizzle of olive oil. Bake in the oven for approx 20 mins at 180° (taste the asparagus). Bake 200 grams of halloumi, cut in smaller pieces, in a pan until golden brown.

Mix tomatoes, courgettes, asparagus and halloumi. Serve at room temperature (or warm, your choice).

  • Some more carbs : beautiful mograbiah with ovendried tomatoes

2017-05-21_23.52.56[1]Start with the tomatoes. The longshaped tomato, also called Roma, is ideal for this recipe. Put 12 halved tomatoes on baking paper. Add a pinch of sugar, a drizzle of balsamic vinegar, a drizzle of oil. Count  1 1/2h at 170° to dry them. Prepare  500 grams of mograbiah (fregola in Italy) in vegetal stock and a pinch of saffron (real stuff from India this time, thanks Vikram!). Boil until al dente. Couscous is a great alternative, or a mixture of both. Bake 2 sliced white onions in some olive oil until almost caramalized. Mix the mograbiah with 2-3 table spoons of olive oil, the onions, and the tomatoes. Add pepper, salt, 2 table spoon of chopped parsley and  1 table spoon of nigellaseed.

  • Meat dish : chicken with sumak, za’atar and lemon

Marinate 2 kg of breasts and legs of a good quality chicken. For the marinade mix 3 thinly sliced onions, 4 chopped garlic cloves, 1 teaspoon of chili pepper, 1 teaspoon of cinnamon, 1 ½ table spoon of sumak, 1 ½ table spoon of za’atar,1 thinly sliced lemon, 1 cup of white wine, 4 table spoons of olive oil. Add 1 cup of chicken stock. Marinate one day in advance in the fridge.

Put chicken and marinade in a large oven dish (skin upwards) and bake for 40 mins at 200°. Cover if necessary.

Bake 50 grams of pine nuts in some butter. Serve the chicken with the pine nuts and chopped fresh parsley.

  • Fish dish : salad with fennel, moscardini (a kind of squid) and scampi

Chop 3 small fennels in thin slices (use the mandoline). Add ½ thinly sliced red onion. Mix the fennel and onion with zeste and juice of 1 lime, 1 chopped red chil pepper, ½ teaspoon of salt and 2 table spoons of chopped fresh parsley. Keep cool.

Bake the fish in advance, of just before serving (will need your attention!). Fry 2 chopped garlic cloves in some olive oil. Add  500 grams of clean, dry and cut squid, or moscardini. Fry for a few mins. Add 400 grams of ‘clean’ scampi. Remove the fluid. Add to the salad. If you do not serve immediately, keep in the fridge! Serve with some seeds of pomegranate, chopped coriander and extra sumak.

  • The most delicious spinach salade ever

Marinate a thinly sliced small red onion and 100 grams of chopped dates in 4 table spoons of red wine vinegar. Cut 100 grams of pita bread in smaller pieces. Bake the bread in some olive oil. Serve 200 grams of young spinach (or similar salad) with the bread, the marinated onions and dates and a drizzle of olive oil. Add some pepper or salt.

For a complete meal you can serve the salad with grilled halloumi and some nuts. Really yummie!

PS: Too much leftover!! Provide some aluminium recipients as doggy bags!!
