This is a recipe which I prepare already since years. Serve it as appetizer, or serve the bell pepper without burrata as side dish (with meat, fish, as part of a barbecue buffet).
Try to find similar bell peppers in different colors. Halve them and put in an oiled dish or on some baking paper. Put a few slices of garlic, 1-3 anchovies filets of good quality, fresh basil, pepper and a half tomato on top (try to find the right size to fit within the bell pepper). Add a drizzle of olive oil. Cover with baking paper. Bake in the oven at 180-200° for approx 40 mins. Serve with fresh basil and burrata , or mozzarella of good quality.
