What do we have left in the fridge : 300 grams of mushrooms, 400 grams of spinach, 2 tomatoes (never keep tomatoes in the fridge!), a square puff pastry, 1 mozzarella and some rocket salad.
For 3p blanch and drain 400 grams of spinach. Try to remove all the liquid. Chop 1 red onion, 3 garlic cloves, 1 spicy little pepper. Cut the musrooms in halves and bake them in some olive oil to get rid of most of the liquid (there are too many to be put raw on the dough). Mix the drained spinach with the garlic, a spicy little pepper and 1 table spoon of grated parmigiano. Add pepper and salt. Spread the spinach on the dough. Add the onion, the baked and drained mushroom and the sliced tomatoes. Add pepper, 1 table spoon of dried thyme, and salt. Finish with the sliced mozzarella (200 grams). Bake in the oven at 180° for approx 20 mins. Serve with fresh rocket salad, good olive oil and balsamic vinegar.
