I am ready for long evenings outside, and so is our terrace. But maybe 9° is still a bit too chilly…
Anyway I probably used muscles which I didn’t train yet, and I feel it, and tomorrow I am sure, even more.
The menu of today respects my sore body. Slice 600 grams of courgettes with a mandoline, or with a cheese slicer. Add 300 grams of broccoli roses, 3 chopped garlic cloves, 1 small spicy little pepper and the stems of fresh basil. Mix with a drizzle of olive oil and put in the oven at 200°. Stir now and again. After 15-20 mins add oven dried tomatoes and reduce the oven temp to 120°. Bake 200 grams of manouri or halloumi in olive oil. Add a lot of fresh basil and serve!
PS : Yesterday I prepared the oven dried cherry tomatoes in the oven at 150°, covered with some salt, pepper, dried thyme, dried oregano and some olive oil for 45 mins. I use half of them tonight (250 grams) and the other 250 grams are for the recipe of the day after tomorrow.
