After a day chasing from one place to another, to another, to another hoping to obtain an Italian number plate, we will have an easy dish tonight.
Cook rice or noodles. Heat a drizzle of peanut oil in a wok. Fry 4 chopped garlic cloves, 5 cm of chopped ginger, 1 chopped spicy little pepper. Add yellow curry paste (1 table spoon for 2, less or more if you prefer less or more spicy). Allow to simmer. Add a variety of chopped vegetables (250 grams of mushrooms, 400 grams of green asparagus, 1 medium sized cucumber, 4 spring onions, 2 chopped green tomatoes). Add 200 ml of coconut cream and cook for 5-max 10 mins. Towards the end of the cooking time add 200 grams of baby spinach (we clean up the fridge today!!). For the finishing touch add chopped basil (thai basil would be the best) and ready to eat (why can arranging paperwork in Italy not be as easy??)
